1pc of 1kg of beef rib
Salt and red pepper corns
------Guinness oyster sauce-------
400g puréed oysters
100g Guinness Foreign Extra Stout
60g fish sauce
Bring all ingredients to a boil and reduce until thick. Once you have a creamy texture, your sauce is ready.
Cook the rib in a preheated oven at 150°C for 20 minutes.
Sear it on a cast iron pan (this replicates a grill).
Rest and slice on the bias.
Dress the rib with the Guinness oyster sauce.
